Crock pottage

Wow! That was some awesome stuff on pancakes. Now, if you haven't figured by now I only cook the things that are really easy. For example 80% of the meals I make myself involve me shaking rub or spice (occasionally salt) on a piece of meat and throwing it in the toaster oven (man, I love that thing). If it wasn't so cold out I'd just grill.

What recipes do you have (that are not difficult) for the good ole crock pot???

  1. Slow Cooker Spicy Chicken. Sounds like a really weird combo of chicken, spicy tomatoes, and peanut butter (can probably sub for your preferred nut butter) but it is super easy and quite tasty. I initially made it thinking it would taste like Thai Raman but the peanut butter taste is pretty indistinguishable in this. Good flavor but you can also kick it up by adding onion or chili sauce. Even my culinarily talented husband makes this b/c it is a great combo of flavor and quick prep.

  2. I can't take credit for this recipe as Joey is the one who shared it with me. So thank Joey for this recipe. It is super yummy!!!!

    PALEO CHILI

    1 pound of beef
    3 pieces of frozen chicken
    1 red pepper
    1 green pepper
    1 carton of button mushrooms
    1 can of tomato sauce
    1 can of tomato paste
    1 jar of salsa verde salsa (the green one - i use trader joes)
    Apple cider vinegar
    Chilua hot sauce


    Spices
    chili powder
    paprika
    cumin
    garlic powder
    oregano
    basil
    pepper
    salt (omit for pure paleo)


    Cook the pound of beef in olive oil in a pan. saute till brown. chop red pepper, green pepper, and mushrooms and add to pan with the beef. dont drain the pan! let the juices and fat soak up into the mix. in a separate pan cook the chicken. chop into small pieces and add to beef/veggie mixture when cooked. season with chili powder, salt and pepper.


    in a separate pot or crock pot (i use a crock pot) add the tomato sauce, tomato paste, the jar of salsa, the cider (i just pour for a few seconds) and as much hot sauce as you would like (i'm very generous). then, add the meat/veggie pan mixture juices and all. add more chili powder, salt, pepper, and all the rest of the spices. be as generous as youd like. taste to see how much you need. the longer you let it simmer, the better it will taste. mine has been simmering for 4 hours and is truly incredible.

  3. Alison - is that 1# of ground beef or any beef?

    My variation uses garlic, carrots, celery, and onions for the peppers and mushrooms. I also toss in advocados (towards the end) and use the organic costco salsa instead of the tomato paste and tomato sauce.

  4. @ Jonny- I use grass fed ground beef, however, I'm sure you could mix it up. I've also made chili closer to your variation although I've found using the tomato paste/sauce makes the chili more like chunky stew which is my fav.

  5. I use Joey's recipe as well. FANTASTIC!!

    Last time I made it I used 1 lb. ground elk and 1 lb. ground turkey thigh meat. I also increase the vegis - more peppers (and more varieties of peppers including spicy peppers), onions, and more varieties of mushrooms.

    So, Jonny - you can really use whatever meat you wish - I used super lean meats and all ground meat b/c that's what I prefer. And ground elk was fantastic tasting in this.

    You've gotta take care when using any pre-made or pre-packaged ingredients like hot sauce, salsa, tomato sauce, and tomato paste, as most aren't paleo. I subbed out the hot sauce since I couldn't find any hot sauce made with only paleo ingredients, and use fresh hot peppers and spices to bring up the spicy. I searched (and found) salsa, tomato paste, and tomato sauce whose only non-paleo ingredient was sea salt so I used those.

    I serve the chili with a dollop of guacamole and a few slices fresh avocado, and finish it off with a dash of sea salt, black pepper, and a squeeze of lime. It's beautiful and delicious. And super easy for the rest of the week.

  6. I made Joey's world-famous chili too, but threw in bison, pork, and venison with the beef - total of 1.5# ... it was extra meaty, but man, it was good ... I know it's good because the whole thing was finished off around 8pm by my gloating ice-cream-eating, bottomless pit boyfriend. Much to his chagrin, I have little/no cravings for all the junk he eats given how much and how often I have to shovel in each day. This is work!

    So I'm consuming about 2700-3000 paleo calories a day and gained only about 2 of the 18lbs I lost while sick. I know some of it is water, but are any of you weight-gainers seeing results after 12 days?

    I think creative recipes like this are really helpful in appealing to my appetite and making all the hard work easier. Thanks everyone!
